Easter Biscuits

Make Easter biscuits to give away at the end of the Easter Day service. 

Recipe for Biscuits

Oven Temperature 350°F 180°C Fan160°C Gas Mark 4


150g butter
125g caster sugar
Finely grated rind of one lemon
2 egg yolks
250g plain flour
Pinch salt
40g currants
Egg white and caster sugar to finish the tops of the biscuits


Grease two baking trays. Cream the butter, sugar and lemon rind together. Beat in the egg yolks and then the flour, salt and currants. The mixture should be stiff but if necessary leave in a cool place until firm. Turn out onto a floured board and roll out thinly. Use cutters to cut biscuits into shapes (eggs, chicks, butterflies).
Brush the tops of the biscuits with lightly beaten egg white and sprinkle with sugar.
Place on the greased baking trays and cook for about 15 minutes until golden brown.

Once cooled place 2 or 3 biscuits in cellophane bags (available from www.craftcompany.co.uk ).
Tie the bags with yellow ribbon and add labels with suitable Easter greetings and the name of the church.
These bags can be given out at the end of the service for everyone to take home to give to a neighbour.
